Abstract
Tartufi su gljive koje razvijaju simbiotski odnos sa drvećem i grmljem u šumskim ekosustavima. Karakterističnog su plodišta, posebnog mirisa, te predstavljaju najvažnije nedrvno šumsko bogatstvo. Tartufi su zastupljeni po cijeloj Hrvatskoj, ali Istra se najviše ističe po najintenzivnijem korištenju tartufa i najdužoj tradiciji. U današnje vrijeme su komercijalno vrlo važne gljive, naročito za gastronomsku promociju istarskog područja i turizam. Najintenzivnije aktivnosti vezane za tartufarstvo se odvijaju u centralnom i sjevernom dijelu Istre. U radu su obrađeni povijest tartufa i tartufarstva u Istri, ekološki odnosi tartufa i staništa u kojima se razvijaju, načini lova na tartufe i važnost pasa tartufara, osnivanje plantaža tartufa, korištenje tartufa i zakonski propisi.
